There is really no standard or traditional way of making the popular dish of Louisiana which is red beans and rice. Read on for some of the more well-known recipes for red beans and rice.
Red Beans and Rice Recipe
Let us begin with all the ingredients needed to make the dish:
2 tablespoons vegetable oil
1 cup chopped onions
½ cup chopped bell pepper
½ cup chopped celery
1 teaspoon salt
½ teaspoon cayenne pepper
¼ teaspoon freshly ground black pepper
2 bay leaves
1 pound boiled ham, cut into ½ inch cubes
6 ounces smoked sausage, cut crosswise into ¼ inch slices (1 cup)
1 pound dried red beans, rinse and sorted through, soaked overnight and drained
3 tablespoons chopped garlic
8 to 10 cups water
Heat the oil in a large sauce pan over medium high heat. Sauté the onions, bell pepper, celery, salt, cayenne, black pepper and thyme for about 5 minutes and then add the bay leaves, ham and sausage. Sauté for another 5 to 6 minutes. Add the beans, garlic and enough water to cover the ingredients in the pot. Bring to a boil, reduce the heat to medium and let it simmer without the cover of the pot. Stir occasionally for about 2 hours. If the mixture becomes dry and thick, add more water. The consistency of the mixture should be soupy but not watery so be sure to add just the right amount. With a wooden spoon, mash about half of the mixture against the side of the pot. Continue cooking, while stirring occasionally, for about 1 to 1 ½ hours or until the mixture is creamy and the beans are soft. Then, remove the bay leaves and serve with steamed white rice.
Tex-Mex Red Beans and Rice
Tex-Mex Red Beans and Rice is another way to prepare the dish. The ingredients for these are:
1 ¾ cups water
1 cup enriched white rice
1 tablespoon extra-virgin olive oil or vegetable oil, 1 turn of the pan
2 slices bacon, chopped
1 medium onion, chopped
1 can red beans, drained
1 tablespoon cayenne sauce
Salt and freshly ground black pepper
In a small sauce pan, bring water to a boil. Add the rice and simmer for 20 minutes, stirring occasionally. When rice is done, remove it from the stove. Use a medium skillet, place on stove over medium high heat. Add oil and bacon and cook for about 3 minutes to crisp edges of bacon. Add the onions and cook for another 3 minutes to soften. Add the beans to heat through and then stir in cooked white rice then, season rice and beans with cayenne sauce, salt and pepper. You can serve rice and beans from the skillet.
Smokey Red Beans and Rice
If you want to try a different variety of the dish, try the Smokey Red Beans and Rice recipe. Prepare the following ingredients:
8 ounces dried red beans
3 cups chicken stock
2 cups beef stock
1 onion, chopped
1 small smoked ham hock
½ green bell pepper, chopped
2 tablespoons minced garlic
1 tablespoon salt
½ teaspoon coarsely ground black pepper
½ teaspoon cayenne pepper
1 tablespoon grapeseed oil
½ pound smoked sausage, diced
Steamed white rice, for serving
In a large Dutch oven over medium heat, put the beans and then add the chicken and beef stock, onions, ham hock, green pepper, garlic, salt, black pepper and cayenne. Stir and bring the mixture to a boil. Once boiling, reduce the heat and simmer for approximately 2 hours.
In a medium sauté pan over high heat, add the grapeseed oil. When the oil is already hot, add the smoked sausage and brown evenly for about 2 to 3 minutes. Add the sausage to the pot with the beans and continue simmering for 20 minutes or until the beans are tender. Transfer dish to a serving bowl and serve over hot rice.
